We spent 3 days fishing Alaska's coast to fill the freezer with fresh fish. Between the halibut and cod, we had a lot of action! We also spent a day tide pooling and beachcombing and came across some wild sea creatures. Our adventure ended with some amazing halibut fish and chips.

Deep Fried Halibut
1 Pound of Fish - Halibut or Cod
1.5 Cups of flour plus 1 cup off to the side
2 tsp salt, separated
2 tbsp cornstarch
Paprika, garlic powder, pepper to taste
1 light beer
Mix 1 cup of flour, 1 tsp salt and cornstarch in a bowl. In a separate bowl, mix 1.5 cups coupe du monde de football flour, 1 tsp salt and spices to taste. Mix well.
30 minutes before frying, slowly mix in beer by the tbsp until it looks like a pancake batter. Set aside.
Heat oil to about 350-375F.
Cut fish into chunks and pat dry. Dredge in flour mixture then in batter. Slowly add to oil. If oil covers fish, no need to flip. Pull out fish when internal temp is 135 F.
*The FDA recommends all fish be cooked to an internal temp of 145 F. Because halibut are incredibly lean and lack fat, cooking it that high can cause it to become dry.
