This is the ultimate guide to roasting a juicy, golden-brown Thanksgiving turkey that will never dry out. Using a butter-soaked cheesecloth technique and savory mozzarella-pepperoni stuffing, this method ensures moist breast meat while achieving perfect all-around browning. The key is starting at high heat to kickstart the roasting process, then lowering the temperature for gentle cooking, while the cheesecloth acts as an insurance policy for the delicate breast meat. Whether you're team stuffing or team dressing, this recipe delivers both, creating a centerpiece that will have your guests asking for seconds.

Ingredients:

For the Turkey:

- 1 whole turkey (16 lbs)

- Salt (for seasoning, separated portion for bird)

- Black pepper (freshly ground)

- 1/2 lb butter (2 sticks, melted)

- Cheesecloth (double layer)

- Parchment paper

For the Stuffing:

- Bread cubes (for stuffing base)

- Mozzarella cheese

- Pepperoni

- Fresh sage

- Chicken stock

- Additional stuffing ingredients as preferred

Yield: 16 servings

Steps:

1. Prep the turkey: Pat the turkey dry inside and out using paper towels, removing all excess moisture from the cavity.

2. Season generously: Separate a portion of salt to avoid cross-contamination. Season the outside of the turkey liberally with salt, paying extra attention to the wings. Season inside the cavity as well. Add freshly ground black pepper inside and out.

3. Stuff the bird: Pack the mozzarella-pepperoni stuffing into the turkey cavity, filling it all the way to the top. Don't worry if some peeks outthere's no need to truss or sew it shut. Let the wings stay out for better browning.

4. Prepare for roasting: Place the turkey on a parchment-lined baking sheet (no high-walled roasting pan needed for maximum browning).

5. Create the cheesecloth shield: Melt 1/2 lb butter (2 sticks). Soak a double layer of cheesecloth milan vs atalanta completely in the melted butter. Drape the butter-soaked cheesecloth over just the breast meat, leaving thighs and wings exposed.

6. Start roasting: Place turkey in a preheated 475-500F oven for the first 15-20 minutes to jumpstart browning.

7. Lower and continue: Reduce oven temperature to 300F. Continue roasting, calculating approximately 12 minutes per pound (about 3-4 hours total for a 16 lb turkey).

8. Remove cheesecloth: Midway through cooking, remove the butter-soaked cheesecloth from the breast meat to allow it to brown.

9. Baste: Tilt the pan and baste the turkey with the accumulated juices and melted butter, making sure some flows back into the stuffing.

10. Finish roasting: Return to the 300F oven and continue cooking until the internal temperature reaches 165F in the thickest part of the thigh. Check that juices run clear (not pink).

11. Rest and serve: Let turkey rest for 1-1.5 hours. Remove stuffing from cavity and transfer turkey to a serving platter. Use the pan drippings for gravy.

Pro tip: Calculate cooking time: Use 12 minutes per pound as your baseline, then verify with a meat thermometer.
