After three weeks of collecting birch sap, its finally time to turn it into syrup! We put our new wood-fired evaporator to work boiling down the sap, finishing our harvest into a rich, dark syrup. Then, we enjoyed the first real taste of spring with some birch-glazed salmon and a pancake breakfast.
Between boils, we finished sanding and painting the living room wall!

1-2 cloves of garlic, minced
1 tsp fresh ginger, or ginger paste
3 tbsp low sodium soy sauce
1 tbsp apple cider vinegar
1 tsp mustard seeds
