Ingredients:
For the Turkey:
- 1 whole turkey (16 lbs)
- Salt (for seasoning, separated portion for bird)
- Black pepper (freshly ground)
- 1/2 lb butter (2 sticks, melted)
- Cheesecloth (double layer)
- Parchment paper
For the Stuffing:
- Bread cubes (for stuffing base)
- Mozzarella cheese
- Pepperoni
- Fresh sage
- Chicken stock
- Additional stuffing ingredients as preferred
Yield: 16 servings
Steps:
1. Prep the turkey: Pat the turkey dry inside and out using paper towels, removing all excess moisture from the cavity.
2. Season generously: Separate a portion of salt to avoid cross-contamination. Season the outside of the turkey liberally with salt, paying extra attention to the wings. Season inside the cavity as well. Add freshly ground black pepper inside and out.
3. Stuff the bird: Pack the mozzarella-pepperoni stuffing into the turkey cavity, filling it all the way to the top. Don't worry if some peeks outthere's no need to truss or sew it shut. Let the wings stay out for better browning.
4. Prepare for roasting: Place the turkey on a parchment-lined baking sheet (no high-walled roasting pan needed for maximum browning).
5. Create the cheesecloth shield: Melt 1/2 lb butter (2 sticks). Soak a double layer of cheesecloth milan vs atalanta completely in the melted butter. Drape the butter-soaked cheesecloth over just the breast meat, leaving thighs and wings exposed.

11. Rest and serve: Let turkey rest for 1-1.5 hours. Remove stuffing from cavity and transfer turkey to a serving platter. Use the pan drippings for gravy.
