This week we canned up the first rounds of spring foraged food over the fire; spruce tip & dandelion syrup. These syrups will be wonderful to have over winter, topping pancakes, ice cream, toast and more. The spruce syrup is something we reach for when a sore throat or cough hits.
We also made a batch of Spruce Tip Salt and some fried dandelion heads over the fire for dinner!

Dandelion Bud Capers
1-2C unopened dandelion buds
1:1 vinegar and water ratio
1/2-1C honey
1-2Tbsp pickling spice
-simmer all ingredients, top capers in a mason, refrigerate 1-2 weeks.
Spruce Tip Salt
1C tips
2C salt
-blend, dry near a fire or low in oven. Store in a glass jar.
Spruce Tip Syrup (not a tested recipe)
8 C tips
8C water
6 C honey
1/4 C lemon
-simmer tips and water 20 min, strain and combine with honey and lemon, re heat to a low simmer. Fill jars to 1/4'' headspace, proccess 10 min in a water bath
Dandelion Syrup (not a tested recipe)
4 C packed petals
6 C water
6 C honey
1/4 C lemon
-simmer petals and water 20 min, strain and combine with honey and lemon, re heat to a low simmer. Fill jars to 1/4'' headspace, proccess 10 min in a water bath
Dandelion Root Poultice
-grate fresh roots well, fold in a cheesecloth, apply to effected area
Dandelion Lymphatic Massage Oil

-fill a mason 1/2-3/4 full with roots (chopped) and blooms. Cover with oil, steep in a sunny warm place 1-2 weeks, strain. Let water come to top of jar, skim off top. Combine with beeswax or use on its own.
Mineral Rich Dandelion Vinegar (or add to Fire Cider)

apple cider vinegar
-fill a jar 1/2-3/4 full of cleaned roots, cover with vinegar. Steep 3-4 weeks, strain. keith urban

epsom salt
-combine all ingredients, athletic - valencia c. f. blend, pour a handful in a bath, enjoy!
